Soil type :
The delimited area of Chablis Premiers Crus wines is located on limestone soils from the Upper Jurassic Kimmeridgian era, very rich in marine fossils and in particular Exogyra Virgula, a small oyster typical of Chablis soils. Butteaux is located on one of the slopes of the valleys that join the valley, on the left bank of the Serein, facing south-east. This parcel is composed of blue clay, which makes the soil very compact. This particular terroir produces wines of original complexity.
Vinification :
Pneumatic pressing and cold static settling. Spontaneous alcoholic fermentation and ageing in temperature-controlled stainless steel vats. Finished maturing for 2/3 months in 228-litre Burgundy barrels.
Tasting :
Golden colour with a white sheen, the tears are clearly visible, suggesting a rich, unctuous wine. On the nose, beautifully ripe fruit with hints of quince and a hint of empyreumatic notes that remind us of its terroir. On the palate, a straightforward attack confirms the nose, with fatness and roundness on the entry and mid-palate, finishing with tension and notes of salted butter caramel.
This wine is a fine definition of the Butteaux terroir. It goes wonderfully with cold meats, white fish or even a cheese platter.
