Soil type :
The defined area of Chablis Premier Cru wines is located on limestone soils from the Upper Jurassic Kimméridgien era, very rich in marine fossils, including the Exogyra Virgula, a small oyster typical of Chablis soils. Located on the Left Bank of the Serein, Vaillons benefits from a beautiful south exposure.
Vinification :
This blend is the result of assembling all of our Vaillons parcels: Épinottes, Minots, Roncières, Châtains, and Vaillons. Pneumatic pressing and cold static settling. Spontaneous alcoholic fermentation in thermoregulated stainless steel tanks.
Aging: 1/3 in stainless steel tanks, 1/3 in 80 hl oak vats, and 1/3 in Burgundian barrels. Blending before bottling.
Tasting :
This feminine and elegant wine, with a very long palate and beautiful density, deserves to be paired with choice dishes: fish, fine charcuterie, poultry, or white meats.
Our Vaillons can be enjoyed according to the enthusiast’s preference: quickly to savor the fruit, but it reaches its full potential after 2 to 6 years of aging.
Organic certification :
Organic certification acquired starting from the 2018 vintage. Certified by Bureau Véritas FR-BIO-10.
