Soil Nature:
The slope of the Chablis Grand Crus extends in a crescent shape on the right bank of the Serein, facing the village of Chablis. It represents only 2% of the total vineyard area. The soil consists of alternating marls and clayey limestones from the Upper Jurassic Kimméridgien, very rich in marine fossils, notably the Exogyra Virgula, a small oyster typical of Chablis soils.
Chablis Grand Cru “Les Clos” occupies the largest surface area of Chablis Grand Crus. Our plot, located on the lower part of the slope, is managed using organic agriculture and benefits from a South-Southwest exposure. Vineyard work is entirely done by hand, and soil cultivation is done with horses.
Vinification:
Pneumatic pressing and cold static settling. Spontaneous alcoholic fermentation. Vinification and aging in Burgundy barrels for 18 months to achieve natural stabilization. In respect of the natural expression of this wine, manipulations are kept to a minimum.
Tasting:
A solid and concentrated wine, Chablis Grand Cru “Les Clos” offers notes of white fruits that balance its mineral profile, so typical of its limestone soils.
It will perfectly accompany crustaceans, lobsters, langoustines, crayfish, and noble fishes such as turbot and sea bass. Slow to age, it begins to flourish between 5 and 8 years but can age further depending on the typicity of the vintage.
