Our Chablis “Les Truffières” comes from a parcel of vines planted in the commune of Villy, to the north of the vineyard, on massive Portlandian limestone with a south-east exposure. The Portlandian soil contains more limestone and is less clayey than the Kimmeridgian soil, of which it is the upper part.

Since it was planted in the early 1990s, this 1.26 hectare plot has been farmed organically, using only organic soil improvers and mechanical weeding and ploughing.
Vinification :
Pneumatic pressing and cold static settling. Spontaneous alcoholic fermentation and ageing in temperature-controlled stainless steel vats. This wine is neither fined nor filtered, so that it is bottled as naturally as possible.
Tasting :
Its pale yellow colour with green highlights and elegant nose, with notes of lemon zest, combine perfectly with its expressive minerality. On the palate, its citrus aromas combined with a fine tension define this wine, which is more elegant than full-bodied. This Chablis is excellent as an aperitif and also goes wonderfully with seafood, snails and charcuterie.
Our Chablis Les Truffières is a ready-to-drink wine that can be laid down for 5 to 7 years.
