Soil Nature:
Saint-Bris, designated as a village appellation since 2003, is the only Burgundy appellation to produce Sauvignon. The vineyard covers about a hundred hectares at the crossroads of Auxerre, Irancy, and Chablis. The village of Saint-Bris-le-Vineux, constructed from old Burgundy stones, sits atop kilometers of extraordinary medieval cellars.
Rich in Jurassic, Kimmeridgian, and Portlandian limestones, similar to Chablis. North exposure provides it with ideal maturity for its fruity character.
Grape Variety:
100% Sauvignon, unique in Burgundy. This vigorous grape produces clusters with small, ovoid berries, golden yellow when ripe, with a rather thick skin and a melting pulp.
Vinification:
Manual harvest in crates.
Spontaneous alcoholic and malolactic fermentation in stainless steel tanks.
Aging in oak barrels.
Tasting:
A wine with a light gold color, its liveliness reveals notes of citrus, peach, while maintaining a beautiful minerality. This complexity leads to a generous, floral, and tender fruity palate with a spicy and iodine finish.
Serve chilled as an aperitif at 8°C – 10°C and slightly refreshed at the table at 10°C – 12°C. Enjoy with oysters and shellfish, fish, and spices such as saffron and curry.
This wine also pairs well with goat cheeses.
