Soil Nature:
Located in the heart of Tonnerrois, a few kilometers from Chablis, the plot of “Vaux de l’Aumône” enjoys a superb southeast exposure. The vines, planted in lyre, take root in a clay-limestone soil dominating the Armançon valley.
Pinot Noir has, since the origin of the Burgundy vineyard, contributed to the reputation of its great red wines. It produces compact clusters of deep purple, with small tight berries containing abundant, colorless, and sweet juice.
Vinification:
Manual harvest in crates.
Pre-fermentation cold maceration. Pneumatic pressing.
Spontaneous alcoholic and malolactic fermentation and aging in oak barrels for 18 months.
Tasting:
The nose reveals aromas of cherry, raspberry, and oak. On the palate, spices and delicate tannins offer a fruity and structured wine.
This wine pairs perfectly with turkey, duck, chicken, and red meats. It will enhance soft cheese such as Brie and Comté.
This wine will reach its peak 2 to 3 years after bottling.
This wine is the result of a long and rigorous selection in the heart of the Burgundy terroir.
