Soil Nature:
The delimited area of Chablis 1er Crus wines is located on limestone soils from the Upper Jurassic Kimméridgien era, very rich in marine fossils, notably the Exogyra virgula, a small oyster typical of Chablis soils. Situated in the municipalities of Fleys and Fyé, after the Montée de Tonnerre, on the right bank of the Serein, Le Mont de Milieu faces south. This exposure guarantees it a higher average temperature and longer sunlight, ensuring quality for this wine.
Our plots are managed using sustainable agriculture. We avoid the use of polluting weed control products and favor mechanical soil cultivation, such as plowing.
Vinification:
Pneumatic pressing and cold static settling. Spontaneous alcoholic fermentation and aging in a 600-liter “Demi-Muit.”
Tasting:
A wine of magnificent simplicity, powerful and refined with great persistence on the palate. As this wine ages, it develops aromas of candied fruits, vanilla, hazelnuts, and toasted bread.
This premier cru plays in an exclusively mineral and feminine register, which will result in a very fine wine if you have the patience to wait 4 to 5 years.
