Soil Nature:
The delimited area of Chablis Premier Crus wines is located on limestone soils from the Upper Jurassic Kimméridgien era, very rich in marine fossils, notably the Exogyra Virgula, a small oyster typical of Chablis soils. Montée de Tonnerre is located on the right bank of the Serein, next to the Grand Crus, and benefits from southwest exposure.
Our plots are managed using sustainable agriculture. We avoid the use of polluting weed control products and favor mechanical soil cultivation, such as plowing.
Vinification:
Pneumatic pressing and cold static settling. Spontaneous alcoholic fermentation and aging in 228-liter Burgundy barrels.
Tasting:
In its golden robe, Montée de Tonnerre reveals a medium-bodied nose, balancing between the subtle harmony of generous fruit and the gentle woody notes of Burgundy barrels. On the palate, this wine completely envelops us and leaves long notes of pleasure thanks to its beautiful length. A wine with finesse.
Our Montée de Tonnerre will reach its full potential after 3 to 6 years of aging.
Montée de Tonnerre deserves to be paired with choice dishes: Fish, shellfish, poultry, or white meats.
