Soil Nature:
The delimited area of Chablis Premier Crus wines is located on limestone soils from the Upper Jurassic Kimméridgien era, very rich in marine fossils, notably the Exogyra Virgula, a small oyster typical of Chablis soils.
Our Chablis Premier Cru “Sécher” is the result of parcel selection since the 2008 vintage. Located halfway up the hill, on the best terroirs of the Vaillons appellation, it benefits from a southeast exposure and a concentration of Kimméridgien fossils in the soil, giving this cru a recognizable typicity. This plot is cultivated using organic viticulture.
Vinification:
Harvest sorting and selection of press juices. Pneumatic pressing and cold static settling. Spontaneous alcoholic fermentation. Resulting from a blend of 70% stainless steel tanks and 30% new oak barrels. In respect of the natural expression of this wine, manipulations are kept to a minimum. Bottled after 17 months of aging without treatment or filtration.
Tasting:
This wine presents a golden yellow color, an engaging nose with both toasty and floral notes. Finally, a full-bodied palate that confirms the nose, ending with a touch of Chablisian minerality.

Organic certification acquired starting from the 2018 vintage. Certified by Bureau Véritas FR-BIO-10.
