The delimited area of Chablis 1er Crus wines is located on limestone soils from the Upper Jurassic Kimmeridgian era, very rich in marine fossils and in particular Exogyra virgula, a small oyster typical of Chablis soils. Montmains occupies one of the slopes of the valleys that join the valley, on the left bank of the Serein, facing south-east.
Our plots are managed using sustainable agriculture. We avoid the use of polluting weed-killers and favour mechanical cultivation of the soil, such as ploughing.
Vinification :
Pneumatic pressing and cold static settling.
Spontaneous alcoholic fermentation and ageing in temperature-controlled stainless steel vats.
tasting:
The youthful white flower aromas of this Montmains give way to a structured wine that is rich and full-bodied, with low acidity on the palate and a long finish of ripe fruit.
Our Montmains will be at its best after 3 to 4 years in the bottle.
A wonderful accompaniment to finely-cooked fish, white poultry and even a cheese platter.
