Our Chablis Vieilles Vignes is planted on the upper part of a slope in the commune of Villy, to the north of the vineyard, on massive Portlandian limestone, with a south-easterly exposure. The Portlandian soil contains more limestone and is less clayey than the Kimmeridgian soil, of which it is the upper part.
The soil is cultivated according to a policy of integrated farming, in which we avoid the use of polluting weedkillers in favour of mechanical cultivation of the soil, such as ploughing.
Vinification :
Pneumatic pressing and cold static settling. Spontaneous alcoholic fermentation and ageing in temperature-controlled stainless steel vats.
Dégustation :
Clean colour and complex nose with light nutmeg aromas. The palate is generous, straightforward and unpretentious, with spicy, iodine notes mingling with mineral acidity. This fruity Chablis is excellent as an aperitif. It also goes wonderfully with seafood, snails and cold meats.
Our Chablis Vieilles Vignes is a ready-to-drink wine that can be kept for 3 to 6 years.
