Soil Nature:
Plot located on the plateau of the town of Villy, on marl soils with oyster shells from the Barremian of the secondary era, dating from 130 to 65 million years ago. This plot benefits from a superb southeast exposure.
The soils are cultivated according to a policy of sustainable agriculture where we avoid the use of polluting weed control products to favor mechanical soil cultivation, such as plowing.
Vinification:
Harvested by hand in perforated crates.
Traditional Method: Pneumatic pressing with juice fractionation.
Cold static settling.
Alcoholic and malolactic fermentation in thermo-regulated stainless steel tanks.
Aging for 24 months on lees before disgorgement.
Bottled after 9 months of aging.
Dosage: 4.5g / Liter
Tasting:
Clear, brilliant robe, persistent foam. Pleasant nose with notes of white-fleshed fruits and citrus, finishing with a brioche and spicy aspect. On the palate, a crisp attack, a bubble all in finesse. This palate confirms the nose, with fruity aromas that evolve throughout the tasting.
Serve at 5-6°C, as an aperitif or as a dessert wine.
